A pastie is a complete meal in a flaky shortcrust shell — meat or vegetable filling, potato, all sealed in a crimped half-moon and baked until golden. It's been the lunch of choice in Britain since at least the 1300s.
It's also the perfect handheld food: it stays hot for ages, you don't need a fork, and it doesn't fall apart in your hand. Which is why it shows up at our markets, our office lunches, and (often) the late-night station at our weddings.
