In London, food was the way you showed up for people. Sunday roasts that took all afternoon. Pies for the neighbors when someone was sick.

I trained in Britain and owned a restaurant there before relocating to Florida, where I owned a restaurant and catering company.

Since relocating to Chicago, I decided to start a new venture alongside the catering — selling British pasties at the French Markets — partly because I missed them, partly because I wanted to test the appetite for proper British food in this city. The booth sold out the first weekend. It's been selling out every weekend since.

We cater weddings, corporate events, and private parties across Chicago, and the pastie stand is still there every French Market. Menus are built from scratch. Every event runs out of the same Chicago kitchen. And I work on every single one personally, because that's the whole point.
